LEMON OLIVE OIL CAKE

Spring has sprung, and there’s no better way to celebrate than with our Lemon Olive Oil Cake and French Blonde Sancerre pairing!

Ingredients:

1 cup Olive Oil

3 Large Eggs

1 1/2 cups Granulated Sugar

1/2 cup Freshly Squeezed Lemon Juice

2 tablespoons of Vanilla

Zest of 3 Lemons

1 teaspoon Salt

1/2 teaspoon Baking Powder

1/2 teaspoon Baking Soda

2 cups of Flour

1 cup of Milk (regular or non dairy will work!)

Garnish: Lemon Slices, Powdered Sugar, and Flowers!

Steps:

Preheat oven to 350.

In bowl, mix together olive oil, eggs, and sugar, then add in vanilla, lemon juice, and lemon zest and whisk. In separate bowl mix together flour, baking powder. baking soda, and salt. Slowly combine dry ingredients and milk into wet ingredients while whisking.

Bake in oven fir about 55 minutes or until center has fully cooked (you can test with a toothpick!). Let set before decorating.
