This Spring Pea Soup paired with our Marly Chablis is the perfect blend comforting recipe to embrace the spring weather!

Ingredients:

1 Medium Yellow Onion, diced

3 Cloves of Garlic, minced

2 1/2 cups Celery, chopped

20oz Frozen Peas

1/2 cup of Canned Coconut Milk (or Heavy Cream)

3 1/2 tablespoons of Olive Oil

3 teaspoons Cumin

3 teaspoons Salt

2 teaspoons Paprika

2 teaspoons Black Pepper

1 1/2 Lemons, juiced

10 Mint Leaves

4 cups Vegetable Broth

Croutons for topping (optional)

Heat olive oil in large pot. Once oil is hot, add onions, garlic, celery, and seasonings. Cook until fragrant.

Add peas, mint, lemon juice, and vegetable broth. Simmer for 15 minutes.

Remove from heat and stir in coconut milk or heavy cream. Let cool before adding to blender.

Blend until smooth. Top with crispy croutons and enjoy!
