SUMMER DINNER SERIES: BRUSCHETTA

Looking for a way to use your homegrown garden tomatoes? Try Bruschetta paired with our Fynbos Chenin Blanc! This simple, classic Mediterranean dish has bright acidic flavors that compliment the balanced and fresh qualities of Fynbos.

INGREDIENTS:

1 Baguette, sliced and toasted

2 tsp Minced Garlic

1/3 cup Red Onion, diced

3 tbsp Olive Oil

2 1/2 cups Roma Tomatoes, diced

1/3 cup Basil Leaves, chopped

Dash of Balsamic Vinegar

Salt, to taste

Heat olive oil in pan and lightly cook garlic until fragrant. Remove from heat and set infused oil to the side to cool.

In large mixing bowl, combine tomatoes, basil, red onion, salt, balsamic vinegar, and garlic infused olive oil. Mix well and let sit for 15 minutes or so to allow flavors to marinate.

Lightly rub fresh garlic clove on each toasted baguette slice, then add a spoon full of bruschetta mixture on top. Pour a glass of Fynbos Chenin Blanc and enjoy!
