SPICY PEANUT SUMMER ROLL

It’s officially summer, and with the warm weather taking over, a refreshing bite accompanied by a glass of chilled white wine is the perfect way to keep anyone cool. Beat the heat with Spicy Peanut Summer Rolls - an aptly named Vietnamese rice paper wrap - paired with our Kavalier Riesling.

 
 

INGREDIENTS

Peanut Sauce:
1/2 cup of creamy peanut butter
2 tsp chili garlic sauce
1/2 tsp ginger
1 tbsp seasame oil
1 tbsp rice vinegar
3 tbsp soy sauce
Splash of water, to thin
1 tbsp lime juice

Add ingredients into bowl and mix until throughout combined.

Tofu:
1/2 block extra firm tofu, pressed
Peanut sauce

Chop tofu into small, equal sized cubes.
Coat in a layer of peanut sauce.
Bake at 400 degrees for about 25 minutes, until crispy.

Summer rolls:
Rice paper
Water, to dip rice paper in
Spicy peanut tofu
Red pepper, sliced
Cucumber, sliced
Red cabbage, chopped
Carrots, shredded
Avocado, sliced
Green onions, chopped
Cilantro, chopped
Mint, chopped
Spicy peanut sauce, for dipping

Add water to flat plate and dip rice paper briefly, then transfer to another plate.
Add tofu, vegetables, and toppings.
Fold the ends of the rice paper over filling and wrap.

Serve with spicy peanut sauce and a glass of Kavalier!
